パリに戻り、ル・コルドン・ブルーで学び、
「あの味を東京で」という想いからMadame Antoinetteは生まれました。
大切にするのは、厳選した食材と丁寧な仕事。

Madame Antoinette
For Hugo, it began with childhood memories: a lightly baked baguette, familiar dishes, simple flavours that stay with you. After many years in Japan, that nostalgia brought him back to Paris, where he trained at Le Cordon Bleu with one idea in mind: to rediscover those flavours and bring them to Tokyo.
Madame Antoinette is his vision of an authentic French bistro, where good ingredients are left to speak for themselves. A comfy place to sit down, whether for lunch, a glass of wine, or a plate to share.
